Eagan, Minn. – March 12, 2025 – Lago Tacos, a beloved local restaurant known for its modern spin on Mexican cuisine, is thrilled to announce the opening of its fourth location on the Viking Lakes campus in Eagan, MN. Scheduled to open mid-late summer, just in time for Minnesota Vikings Training Camp, the new 6,000 sq feet restaurant and expansive outdoor patio will be located at 730 Vikings Parkway, adjacent to the development’s multi-phase apartment community, Viking Lakes Residences. 

Lago Tacos, which currently operates in Uptown, Excelsior, and Plymouth, offers a creative menu featuring innovative dishes and a unique cocktail selection. The new location at Viking Lakes will continue to deliver the same high-quality dining experience that patrons have come to love.

In addition to the in-restaurant experience, Lago Tacos will also be able to provide catering services for meetings and events at Viking Lakes and the surrounding community, further integrating into the community and supporting local attractions.
